Before I was vegan my favourite toast topping was cottage cheese and ketchup. When I think about it now it kind of makes me gag…

Someone (I think my besty best friend Shoshana) told me that this crazy concoction was Richard Nixon’s favourite thing to eat…

I always thought she was full of “cottage cheese” but I googled Richard Nixon, Cottage Cheese and Ketchup and got a lot of hits. *laugh* Who knew?  πŸ™‚

    Now that I’m a student with very few cooking options, I make garlic bread in the toaster (not an oven).

    I cover the bread in olive oil, and toast it until brown. Then I peel a clove of garlic and rub it against the bread until the garlic is gone, then I sprinkle it with parsley.

    Sooo good!

    My favorite thing to do with the bread is really simple. Make sandwiches and take them to the park with my wife and our little girls for a picnic.

  6. I like to turn sprouted grain bread into croutons and coarse breadcrumbs for making chickpea cutlets and things of that nature. It definitely adds much more flavor to whatever it is that I’m making and is healthier than buying crappy white bread crumbs.

    Aside from all sorts of savory sandwiches, one of my favorite things to do with bread is a dessertwich of Ricemellow and a homemade vegan version of Nutella, something like this http://www.sugoodsweets.com/blog/2005/12/nutella/

    …This is possibly not the sort of story you had in mind, but I thought IÒ€ℒd share in honour of LilÒ€ℒ Beaky…
    When myself and himself moved into our first apartment together, I found it really hard to get used to. I’d always lived near a park or the sea, and we were suddenly in a high rise surrounded by banking buildings. So, on our tiny balcony I tried to create a tiny nature reserve. I built bee boxes, butterfly feeders, planted wild flowers and I had a tonne of bird feeders. We soon had all the lil’ creatures we could hope for taking a rest stop outside our window.
    Then one day we had a new arrival – a newly fledged magpie who had no top beak (soon to become known as Lil’ Beaky). He tried a few times to eat from our feeders, but his broken beak wouldn’t let him. I left lots of food out on plates, but he just couldn’t manage them. Then I tried some water-soaked bread and we hit the jackpot! he came to our balcony everyday for a year – sitting patiently on the roof of the building across from us if I hadn’t filled up his plate since his last visit.
    I was a poor student, so I like to think that when he disappeared, he found himself a balcony with a fancier batch of bread, and maybe some bottled water πŸ™‚

    I like to take 2 slices of bread, take crust off, then take some yummy vegan ice cream and put it between the bread, then crimp or pinch the bread around the ice cream, similar to putting dough around ice cream, then fry it!! Like having fried ice cream!!

    Hmm I also like to take crust off slice of bread, spread vegan cream cheese on bread, roll the bread, slice into 3 pieces, dip each piece in melted vegan butter, then dip in sugar/cinnamon mixture, put on baking sheet and bake for 5-8 min

    I like to make little elephants out of toast, topped with peanut or almond butter to keep all the pieces in place πŸ™‚ I will post a picture for you when I get home… My mom did this for me when I was little πŸ™‚

    I like to use stale bread to make a vegan version of Bobotie, a South African beef pie.

    It has a crust made of bread soaked in milk (I substitute soymilk) and is topped with a layer of beef, dried fruit and nuts seasoned with tumeric, curry powder and lemon juice. Instead of beef, I used cooked lentils, ground seitan, TVP or crumbled tempeh (depending on what I have!)

    On top of the meat layer is a egg & milk custard, but I just blend soft tofu with soymilk and pour that on top.

    Then you bake the whole thing.

    It’s a hearty dish, and uses up your leftovers!

    Lightly toast a slice of whole wheat bread. Dot with chunks of dark – very dark – chocolate and with Sweet & Sara Marshmallows. Pop back in the toaster oven until…well…untill I think they are ready… MMMM – BREAKFAST IS SERVED! (when I need a little sumpin’ more – I spread on a schmear of raw almond butter after the first toasting.

    Bake or grill bread with lots of fruity olive oil. Then top it with bruschetta-heirloom tomatoes, garlic and fresh basil, then salt and pepper for old-school flavour. Or fig, tofu ricotta and caramelized onion, or fava bean spread, blood orange and spring greens. YUM!

    With the marvelous multi bread (I really do buy it lol) I have open faced sandwiches with homemade basil garlic hummus, tomato, avacado, vegit salt, nnutch yeast and pepper!

    When we were kids, my brother, sister & I would take a slice of delicious squishy Wonder Bread, spread it with pale yellow margarine & coat it with white sugar. Then, we would fold the slice over & over & over & squish it until it was a ball of doughy sugary goodness.
    I will not be telling my 8 yr old about this!

    I love toasting two slices of white bread, spreading peanut butter on them, adding a sliced banana on top of the peanut butter…and voila, a peanut butter and banana sandwich! I only found out awhile ago that it was Elvis’ favorite sandwich πŸ™‚

    My favourite thing to do with bread is to make the “ultimate toasted cheezley sandwich”. The outside of the toasted sandwich gets covered with a vegan margarine (nuttlex for those in Australia), then the margarine is covered with nutritional yeast flakes. Cheezley goes on the inside (and a drop or two of truffle oil for an extra special treat!), then it’s toasted until the outside is a gorgeous golden colour.

    Cut up the bread into little triangles, toast it then brush with olive oil and sprinkle with sea salt and then serving it with bruschetta and guacamole.

    Cubed Squirrelly bread (or kamut if it’s sold out which it often is) cubed and fried in sun dried tomato oil. Toss into any salad as croutons (if you don’t gobble them up as a snack first)… YUM!!!

    hmmmm.. after taking about 2 sec to think about my favorite sandwich or way to eat bread.. I have come to the conclusion that my favorite sandwich is to take slices of oranges and top with thin slices of onion and tuck these in between soft, fresh bread.. I know it sounds odd.. but it’s so amazingly delicious ! Gee, now I’m hungry and am off to the kitchen for a late night snack.. guess what I am going to have.

    My Favourite Zany Thing I like to do with my Favourite Silver Hills Bread is I like to soak the Silver Hills Bread in Apple cider vinegar (with the mother) and then Bake it or broil it until it is a delicious apple cidery tasting crouton

    most creative thing i make using bread: rustic tomato soup

    my 20 month old’s favorite: daiya grilled cheese (which i am very excited about because i still get to offer him traditional kid foods but without the weight of animal cruelty)

    My favorite thing to do with bread is to spread some white chocolate peanut butter on it, then top it with bananas and chocolate chips. I then melt it in a toaster oven. It’s like a quick desert!

    My favourite thing to do with bread is to cover it with a ton of peanut butter, cut it in half (triangles only!!), eat the middles then give the peanut butter crusts to my rottweiler Kitty…she LOVES bread and peanut butter!!!!

    Tomato and Bread Soup

    2 tablespoons olive oil, divided
    4 to 6 slices of tempeh bacon
    1 large onion, minced
    1 large stalk of celery with a few leaves, minced
    1 tablespoon of flour
    2 garlic cloves, minced
    1 28-oz can of crushed or pureed tomatoes
    28 oz of water (use the can to measure)
    2 tablespoons tomato paste
    1 to 2 tablespoons sweetener
    1 teaspoon dried oregano
    1 teaspoon dried basil or 1 Tbsp fresh chopped basil
    2 cups stale bread, cubed
    black pepper, cayenne pepper and/or salt to taste

    If bread isn’t completely dry, cut it in cubes and spread on a cookie sheet in a 300 degree oven while you prepare the soup.

    Put 1 tablespoon of olive oil in a pot and add the tempeh. Stir occasionally over medium heat until nearly crisp.

    Add 1 more tablespoon of fresh olive oil. Add the minced onion and celery and sauté, stirring frequently, until onion is nearly transparent. Add flour and continue to cook until flour is light beige in color. Add the minced garlic and cook for another minute; be sure the mixture doesn’t brown beyond dark beige.

    Remove from heat. Stir in tomatoes little by little to combine with the flour. Add the water, tomato paste, basil, oregano and 1 tablespoon of sugar. Bring to a boil, then reduce heat and simmer, covered, for 15 minutes.

    Taste, and add salt or black pepper if desired, and another tablespoon of sweetener if the soup is still too acidic.

    Add bread cubes, stir just to mix, and simmer another 5 to 10 minutes on very low heat until bread is soft but not mushy.

    Someone already mentioned one of my “new” fav things to do with bread. However, when I was a young lass (several decades ago), my momma use to make me white bread and butter with sugar on top. It was the most decadent treat to me, even though at that time I had no idea what decadent meant. These days its whole grain toast and vegan marge with cinnamon sugar on top. I start out with two slices…
